Zeytin, tuz ve su ile havuzlarda bulu\u015fturulup \u00fczerine \u00e7ul seriliyor. \u00c7ul \u00fczerine tahtalar dizilip ta\u015fla bask\u0131 uygulan\u0131yor ki suyun i\u00e7inde kalabilsin ve ac\u0131l\u0131\u011f\u0131 gitsin. Zeytinler bu \u015fekilde 2 g\u00fcn bekletildikten sonra suyu al\u0131n\u0131yor ve 2 g\u00fcn de kuru bask\u0131da bekletildikten sonra temiz su ekleniyor. Belli periyotlarla suyu de\u011fi\u015ftirilerek, 9 derece tuz oran\u0131yla salamura s\u00fcresi dolana kadar (yakla\u015f\u0131k 9 ay) tuzlu suda bekletilerek do\u011fal fermantasyon sa\u011flanm\u0131\u015f oluyor.
